Food to feature in Searsons

Having been closed for just under a year, Searson’s of Baggot Street has re-opened as part of the Chawke Group of pubs.

Charlie Chawke’s son David, who has over 20 years’ experience in the pub trade and currently runs The Bank in Dame Street, will co-run the pub.

Following a ‘six figure investment’ the bar, formerly leased from Diageo by the Thomas Read Group (now in Receivership), will employ 40 new part-time and full-time staff.

David Chawke stated that he was delighted to have the iconic bar open again and just in time for the recent Leinster-Munster match.

He added that they have improved the building with the addition of more bathrooms, plasma screens to cater for all sports enthusiasts and a state-of-the art kitchen that serves lunch seven days a week. Friday and Saturday will be late opening with brunch and lunch roast specials. Jazz will be played on Sunday evenings.

In these hard-pressed times, Charlie Chawke remains a firm believer in the value of having a food operation on the premises.
“Pubs that do food and do it well will always do well,” Charlie told Drinks Industry Ireland, “We’re serious about food in our pubs. It takes a bit of hard work but that’s what life is all about”.

The Chawkes hope to restore Searsons to “its great past” and as Charlie explained, “When I was an apprentice in the 60s, it was certainly one of the finest pubs in the city and there’s no reason why it can’t be again. It hasn’t moved out of Baggot Street…”.
