During week two of Febvreuary, Fiona Beckett of matchingfoodandwine.com inspired restauteurs, chefs and the wine trade as she travelled to various parts of Ireland to host seminars on pairing different foods with wines of choice. Her first stops were Café Merlot, Enniskillen and Ox Cave in Belfast. From there she led a Food Trail in Galway City which included food from O’Conaire’s; Cava Bodega; Brasserie on the Corner; Bite Club and the Latin Quarter Bistro. She advised her audiences to liaise with the chef to discuss the flavours and sauces to be used with a dish before making the wine choice. Thursday brought her to Ananda, Dundrum Shopping Centre where the emphasis was on how seasoning affects your wine choice. Beckett’s final day of the week-long tour was at at Fenn’s Quay in Cork city where she matched local artisan food with her choice of Febvre wines.
