Martin Food Equipment, supplier of equipment and innovation to the Irish retail and casual dining foodservice industry has hosted an on-trend treat for Irish business at its Innovation Centre, which was hailed as a massive success.

More than 70 businesses from across Ireland descended on Martin’s campus in Dundalk for the one-day workshop exploring the myriad ways chicken features on menus. The MFE Foodservice Team partnered with top food suppliers including Manor Farm to showcase eight casual dining menu concepts to the attending business owners.

The Casual Dining Chicken Menu concepts included delicious fresh, local chicken marinated and cooked on the stunning and theatrical Inotech ‘ Wall of Flame’ Rotisserie. Southern Style pressure fried chicken was centre stage as Henny Penny demonstrated just how healthy fried chicken can be.

“It’s all in the pressure cooking,” said Martin Donohue, foodservice trainer with Martin Food Equipment.”It arrests oil absorption in the chicken while locking in delicious tasty juices.

“Southern Style Chicken is delicious served on its own,” Penny added, “but is the most versatile menu ingredient to be served in a gourmet sandwich, roll, wrap or bowl.”

Retail and casual dining foodservice theatre begins and ends with a Deli – Servery counter, which was expertly dressed by Ingrid O Neill, foodservice trainer at Martin Food Equipment.

Visitors also got a live cooking demonstration of just how central combi-cooking is to casual dining food preparation, and more.

Martin Food Equipment will host a number of casual dining workshops at its centre in Dundalk in early 2018. To register for notifications regarding these events, and to attend, contact info@mfe.ie or call 042-93-303-636l.
