Good news: Irish cream liqueur ice cream launches
Partnership between Glastry Drinks and Niche Drinks leads to innovative 'Saint Brendan's Ice Cream'

Northern Ireland companies Glastry Farm Ice Cream and Niche Drinks recently unveiled the fruit of their partnership, an innovative ice cream based on Niche’s Saint Brendans’ Irish Cream Liqueur. The new flavour was presented to celebrity chef Jean-Christophe Novelli on a recent trip to Derry, who responded enthusiastically.
The ice cream follows a proposal by Derry and Strabane Council to Will Taylor, MD of Glastry Farm in Kircubbin, Co. Down, to develop an ice cream product especially for the recent Derry stage of the Clipper Round the World Yacht Race, which ran from 9 – 17 July as part of the Foyle Maritime Festival.
“After we were approached by Derry and Strabane Coucil, we were delighted to be part of such an important community event in the north west,” says Will Taylor, “and readily agreed to the suggestion that we team up with Saint Brendan’s Irish Cream Liqueur. After all, it is one of the global leaders in Irish cream liqueurs.”
Taylor discussed the project with Ciaran Mulgrew, managing director of Niche Drinks, who was also supportive of the idea. “We’ve been working on blending the liqueur with our ice cream,” Taylor continues, “and extensive taste tests have produced immensely positive feedback.”
Saint Brendan’s Irish Cream Ice Cream has been added to Glastry Farm’s product portfolio, and will be soon available across Ireland and the UK. Taylor adds that he hopes the internaional sales of Saint Brendan’s Irish Cream liqueur will lead to strong exports for the ice cream too.
